Snack time

I interrupt this hiatus in blogging (sorry about that, I always mean to be a better blogger) to share this weeks great invention.....

Drum roll please.......

............rice cake pizza.

Yes really. Take one rice cake. Spread with tomato puree. Top with sliced cheese. Put under grill till cheese is melted.

Yum.

If you're being fancy you could add oregano.

OK, I realise this may not be to everyone's taste. Or indeed normal people might just opt for cheese on toast. But I am very, very pleased with my new discovery.

I should really have gone forward in time at the point when I couldn't have gluten, to realise that I'd need to save all my recipes and tips, for you, in the future..

(rice cake pizza was one of them, gluten free pastry wasn't!)
